The History of Pig & Pie
Standing on a milk crate mixing cornbread in a bowl, John Hamilton got his first taste of the restaurant business. The Hamilton family operated the Fox Restaurant in Jackson, Tennessee from the late 1930's until 1958. J.T. Hamilton Sr. bought The Hut restaurant in 1949. It was located on Humboldt Highway which is now Highland Street. During the 60's and 70's under the supervision of Uncle Steve and Father Tommy, The Hut thrived. It became a southern tradition for northerners traveling to New Orleans and Biloxi, Mississippi.
The Hut employed the same loyal kitchen staff for over 30 years. Some were even present for the original dirt kitchen floor. Lillie, Jimmy Neal and Mother Nell were a few of the cooks that maintained a food tradition that carried on for nearly half a century. Some of those recipes used then are still being put to use at The Pig & Pie.
John picked up on that tradition earning a degree in Restaurant Management from the University of Tennessee. He has managed chain restaurants such as L&N Seafood Grill, Ruby Tuesday, Applebee's to name a few. He came back to Nashville in the early 90's and founded Pig & Pie in 1998. He won a large catering account with two partners, and opened the restaurant on Charlotte in 1999.
